- Combine chicken portions and water in a pot and boil until the water has evaporated, five to 10 mins. Remove chicken pieces from the pot.
- Heat oil in the same pot and cook onion, ginger, and garlic until softened and aromatic, about three mins. Add chicken pieces and tomatoes and prepare dinner for about five minutes. Stir in coconut meat, coconut water, and bok choy. Simmer till chook is cooked thru, about 15 mins. Season with fish sauce and salt.
